水煮 / 湯底
適合:雲吞 · 餃子 | 烹飪時間:15分鐘
最簡單的做法是將餃子放入湯中煮。建議使用雞湯底,配蔬菜及麵條。
- 將水或湯底煮沸。
- 放入適量餃子。
- 以中小火煮約10分鐘。切勿蓋鍋蓋,以免餃子皮破裂。
- 剩約5分鐘時放入蔬菜。麵條請另鍋煮,煮好後用冷水過冷河效果更佳。
- 盛碗即可食用。若以清水煮,瀝水後配蘸醬食用。
煎
適合:鍋貼 · 日式餃子 · 生煎包 | 烹飪時間:15–20分鐘
- 以中火在平底鑊倒入薄薄一層油。
- 將鍋貼平底向下排放,勿過於擁擠。
- 慢煎約7分鐘至金黃色,若受熱不均可稍作移動。
- 煎至金黃後翻面。
- 加入冷水,約覆蓋鍋貼的2/3。
- 大火蓋鍋蓋煮7至10分鐘。
- 水份蒸發後,鍋貼即熟透。
- 可多留片刻令外皮更脆,期間移動以防焦底。
- 配豉油或柚子醋享用。
蒸
適合:小籠包 · 燒賣 | 烹飪時間:15分鐘
- 燒開一鍋水。
- 將食物放入金屬或竹製蒸籠,底部鋪生菜葉防黏。
- 蒸10至12分鐘。
- 配紅醋、黑醋或豉油享用。
上海麵 · 菠菜麵
- 將麵條放入沸水中煮5分鐘。
- 用篩網瀝水,以冷水過冷河。
- 放入湯中享用。
雲吞麵
- 將麵條放入沸水中只需10至15秒。
- 迅速撈起,用篩網以冷水過冷河。
- 放入湯中享用。
How to Cook
Boiled or In Soup
Recommended for: Wontons and Dumplings
Cooking Time: 15 min
The quickest and easiest way is to serve the dumplings in soup. We recommend using a soup base like chicken broth, served with vegetables and noodles.
- Bring the water or broth to a boil.
- Put the desired amount of dumplings into the soup.
- Let the dumplings simmer for about 10 minutes. DO NOT put the lid on the pot — the skin is delicate and will break.
- With about 5 minutes left, put the vegetables in. Cook noodles separately and rinse with cold water for best results.
- Pour into a bowl and serve. If boiled in water, drain and serve with sauce instead.
Panfried
Recommended for: Potstickers, Gyoza, Panfry Pork Buns
Cooking Time: 15–20 min
- On medium heat, pour a thin layer of oil onto a frying pan.
- Place the potstickers flat-side down. Don’t overcrowd.
- Allow to slowly golden for about 7 minutes. Shuffle if the pan heats unevenly.
- After 7 minutes or when golden, flip to another side.
- Fill the pan with cold water, covering about 2/3 of the potstickers.
- On high heat, cover with a lid and boil for 7–10 minutes.
- Once water evaporates the potstickers are fully cooked.
- Leave them a little longer to crisp the skin — move them around to prevent burning.
- Serve with soy sauce or ponzu sauce.
Steamed
Recommended for: Steamed Pork Buns and Siu Mai
Cooking Time: 15 min
- Boil water in a pot.
- Place contents in a metal or bamboo steamer. Line the bottom with lettuce to prevent sticking.
- Steam for 10–12 minutes.
- Serve with red or black vinegar or soy sauce.
Shanghai & Spinach Noodles
- Cook the noodles in boiling water for 5 minutes.
- Rinse in cold water with a strainer.
- Serve in soup.
Wonton Noodles
- Place the noodles in boiling water for only 10–15 seconds.
- Quickly remove and rinse in cold water with a strainer.
- Serve in soup.
